To make the pastry:

  1. Sift the flour into a mixing bowl, then rub in the butter with your fingers until the mixture resembles breadcrumbs.
  2. Add the sugar and gradually add in the egg yolk and cold water until the dough starts to come together.
  3. Knead the dough for a few minutes until it forms a smooth ball.
  4. Wrap the dough ball in cling film and chill it in the fridge for at least 30 minutes.
  5. Preheat your oven to 200°C.
  6. Roll out the pastry on a floured surface and use it to line a tart tin (about 6cm diameter) with a removable base.
  7. Trim the edges and prick the base with a fork a few times.
  8. Bake the pastry for about 10-12 minutes, or until it turns golden brown. Remove it from the oven and let it cool.

To make the custard filling:

  1. Whisk the eggs and sugar together until they turn pale and creamy.
  2. Add the milk, whipping cream, and vanilla extract and mix well.
  3. Sieve the custard mixture into the cooled tart shell.
  4. Reduce the oven temperature to 180°C and bake the tart for about 20-25 minutes, or until the custard has set.
  5. Remove the tart from the oven and let it cool before removing it from the tin.
  6. Serve cold and enjoy your delicious Egg Tart Little Pony.
