Ingredients:

- 2 cups of basmati rice, soaked

- 2 pounds of beef, cubed

- 1 large onion, chopped

- 1 inch ginger, grated

- 6 cloves of garlic, minced

- 2 tablespoons of tomato paste

- 2 tablespoons of ghee (clarified butter)

- 1 cinnamon stick

- 6 cardamom pods

- 3 cloves

- 1 bay leaf

- 1 teaspoon of cumin

- 1 teaspoon of coriander

- 1 teaspoon of turmeric

- 2 teaspoons of garam masala

- Salt to taste

Instructions:

1. Heat up a pot of water and add in the soaked rice. Cook until it's about 70% done.

2. In a separate pot, heat up the ghee and add in the cinnamon stick, cardamom pods, cloves, and bay leaf. Fry until it's aromatic.

3. Add in the onions and fry them until they're slightly browned.

4. Add in the ginger and garlic and fry them until the mixture is fragrant.

5. Add in the tomato paste and fry until the mixture is a deep red colour.

6. Add in the beef and stir until everything is well coated with the mixture.

7. Add in the cumin, coriander, turmeric, and garam masala. Mix well.

8. Add salt to taste.

9. Cover the pot and let it simmer for about 40 minutes or until the beef is tender.

10. In a separate frying pan, fry some sliced onions until they're crispy.

11. Remove the pot from heat, top it off with the crispy onions, and let it rest for 10 minutes.

12. Serve the beef and gravy on top of the cooked rice.
