Ingredients:

- 500g Ikan Kembung or Selar

- 1 cup coconut milk

- 2 tbsp tamarind juice

- 3 tbsp chilli paste

- 2 tbsp turmeric powder

- 2 tbsp ginger paste

- 2 tbsp garlic paste

- 1 tsp salt

- 1 tsp sugar

- 2 stalks lemongrass, bruised

- Banana leaves (optional)

Instructions:

1. Clean and gut the fish, then pat them dry with a paper towel. Make a few deep slits on both sides of the fish with a knife.

2. In a large bowl, mix together the coconut milk, tamarind juice, chilli paste, turmeric powder, ginger paste, garlic paste, salt, and sugar until well combined.

3. Add the lemongrass and fish to the bowl, turning to coat the fish well with the marinade. Cover and let the fish marinate in the fridge for 1-2 hours.

4. Preheat a grill or barbeque to medium-high heat.

5. Remove the fish from the marinade and shake off any excess. If using banana leaves, place a piece on the grill and grill until the leaves turn slightly brown. Then, place the fish on top of the banana leaves and grill for 8-10 minutes on each side or until the skin is crispy and the flesh is cooked through.

6. Once the fish is cooked, remove it from the grill and serve hot with some steamed rice and a side of sambal sauce.
